Soy texturate (soy protein texturate, soy meat) - a product of soybean processing - a meat substitute, usually made from defatted soy flour. Soy texturate is an instant product rich in protein and low in fat. It is widely used in vegetarian and East Asian cuisines. In English, the terms textured vegetable protein (TVP) and textured soy protein (TSP) are used, which translate literally as "textured vegetable protein" and "textured soy protein".
Soy texturate is produced by extrusion cooking of dough from defatted soy flour or soybean meal and water. The resulting spongy mass is crushed and then dried. Depending on the grinding of the dough during the production process, soy textured pieces can have different shapes and sizes, for example: minced meat (granular), flakes, goulash, chops, cubic or oblong pieces, etc.
